Courgette Fritters

When even giving them away to the neighbours fails...Try these! Whether you’re an old time plotter or an early starter, we all get fed up of picking the

same old crop and we end up giving a lot of it away, this is mainly because we just don’t know what to do with it.

Each and every one of us cook things differently and sharing our ideas will help us to make the most of our crops!

We are going to whack out some great ideas to try out here, all using the produce that we have available on site. If you are missing a few ingredients, ask your neighbour, they probably will have it to share!

Our first excellent example is the courgette...known to the Italians as Zuccini!

These have been grown on our site for years and on some plots always been a bountiful crop. The best chefs love this vegetable and especially the smaller ones with the beautiful flower attached which is stuffed with the likes of mince. Whilst a lot of plotholders haven’t tried this, when Michelle Roux Jnr cooks them on tv, they look amazing!

We have also thrown in an idea for what to do with those bags of tomatoes...


Courgette Fritters

Try a fritter!

Ingredients 225g grated courgette 2 eggs, beaten 4 tablespoons chopped onion 8 tablespoons plain flour 8 tablespoons grated Parmesan cheese 8 tablespoons grated mozzarella cheese salt to taste 2 tablespoons vegetable oil

Method In a medium bowl, combine the courgette, eggs, onion, flour, parmesan cheese, mozzarella cheese and salt. Stir well enough to distribute ingredients evenly. Heat a small amount of oil in a frying pan over medium-high heat. Drop courgette mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Courgettes are also very tasty just slicing them up and frying them on a hot heat...this brings out a lovely charcoal smell in them.

Also, try stuffing them with mince or cheese and ham with garlic and herbs and bake them in foil in the oven.
